On Baking

I think the reason I so vastly prefer baking to cooking (besides my insatiable sweet tooth) is that I’m anal (like we didn’t know this already). When you cook, the whole thing is kind of fluid: add a bit more of this, a bit more of that, substitute this spice, etc. While you can certainly experiment when you bake, proportions and combinations are kind of the whole point, you know, for the rising and whatnot. So, there are rules, measurements, times, and order. Things I like.

i think that’s why i like cooking so much, the decreased margin of error. i cant pay attention long enough to measure things exactly…and cant leave well enough alone…i once made the statement “that doesnt seem like enough flour”…how would i know?

i’m the same way, BUT i love cooking. if i’m making something specific, i have to have the recipe in front of me, because i am petrified of screwing something up, and wasting food. but at the same time, with somet things, i’m getting really used to just throwing things in the pot and hoping for the best. generally, anything with pasta, oil, vegetables, and sundried tomato pesto falls under that heading.
