Peach-blackberry pie: fixing the crust
Shaun asks for a pie (or cake) pretty much every day, but he seemed particularly adamant about it this weekend. I asked him what kind of pie he wanted, and he said he figured it was apple pie season. I told him I thought we could get away with making a late peach pie. We also picked up a pint of blackberries, which pair great with peaches.
Do you suffer from soggy pie bottom? Well, I do, and I set out to fix my crust. I found various sites online that recommended doing an egg wash on the bottom of the crust before adding the filling. I tried that as well as baking the pie on the lowest possible rack in the oven. It worked great!
I used the all-butter pie crust from Simply Recipes. The rest I loosely based on this recipe for Peach Pie from Allrecipes, or, more specifically, to the fruit I added: 1/2 cup whole-wheat flour, 1/2 cup sugar, 1/2 cup brown sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg.
