Sweet potato dumplings

For Christmas I got this cookbook for Shaun: Screen Doors and Sweet Tea: Recipes and Tales from a Southern Cook by Martha Hall Foose. A lover of fried okra, I figured he’d appreciate a book of Southern recipes. (I hate all forms of okra, by the way.) Paula Deen’s endorsement didn’t hurt, either.

This is one cookbook I would proudly have in my kitchen! It has great information and wonderful recipes!

For New Year’s Eve, we stayed home and watched football. I made ice cream, and Shaun made dinner from his new cookbook. I also worked from home that day to avoid the madness downtown. It was a really pleasant way to end 2008.

The first recipe he picked out was sweet potato dumplings, which are not so far removed from gnocchi.

After the dumplings are made and boiled, they are cooked in two sticks of butter and covered in Parmesan cheese! What could be better?

Shaun also made pork chops from another recipe in this book, which were stuffed with apples and onions. Once they are finished cooking, a little apple butter is spread across the top.

So, get this cookbook, because then you can eat food like this!

Mmm, porkchops smeared in apple butter. My favorite thing is TWO sticks of butter though. Because one is just simply not enough. Looks yummy!
