Aubergine
I went a little crazy in the produce section tonight. If it was green, I pretty much bought it: asparagus, spinach, peppers, romaine, etc. Apparently I was jonesing for some veggies.
I decided I’m going to get into eggplant. I’m an adult now, and I can just make decisions like that. The last time I tried eggplant I didn’t like it, but I was young and naive then. Plus, it’s purple.
I read somewhere online today about a vegetable called aubergine. I thought, what on earth is an aubergine?! Turns out it’s just another name for eggplant, and I really should have known that because I took French.

Roasted eggplant is the way to go. My parents grow probably a hundred pounds of eggplant each season. Just stay away from the green thorny cap. Hurts like hell. Oh and peel of the skin after roasting. Much easier.
